Cumin Roasted Carrot (makes 4 servings)- 4 large carrots, sliced into ¼-inch (½ cm) rounds
- 3 Tbsp extra virgin olive oil
- 3 Tbsp orange juice
- 1½ tsp cumin seed
- ½ tsp sea salt
- ground black pepper, to taste
- Pinch of cayenne
Preheat the oven to 450ºF/230ºC.
Slice the carrots. In a medium bowl, mix together the rest of the ingredients. Add the carrots and mix well.
Spread out the carrots in a single layer on a rimmed baking sheet.
Roast for 20 mins and then remove from the oven to flip the carrots over to ensure even cooking.
Roast for another 10-12 minutes, until browned.
